Foie Gras "With Integrity"


While WaterNotes is certainly not a food blog and I’m no foodie myself, this talk about ethically produced foie gras from Spain (at TED of course) really grabbed my attention. Dan Barber gives a talk on the transformation of a mindset from a farming system of mass production to a carefully tended labor of love – of foie gras and of geese – that yields a product so supreme that it won, as Barber calls it, the culinary equivalent of an Olympic medal. Its an intriguing hint that sustainability, ethics, and conservation have ever expanding touches upon all the areas of our lives including the food we eat.
